Coconut sweet potato fries with tahini dip

Sweet potatoes are sliced, tossed in organic coconut oil and roasted to crispy perfection. Serve these healthy baked fries with the sweet tahini dip for a healthy side dish or snack.

These coconut sweet potato fries are going to blow your mind! We took fresh sweet potatoes and sliced them into wedges, then tossed them in healthy organic coconut oil. We baked these fries instead of deep-frying them, and the result is still crispy on the outside soft on the inside french fries. We made a unique dip for our fries using tahini, which is a sesame paste and resembles peanut butter. You don’t have to feel guilty after these!

Coconut sweet potato fries with tahini dip recipe

Yields 4 servings

Ingredients:

For the sweet tahini dip

  • 1/2 cup tahini
  • 1/4 cup pure maple syrup
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

For the sweet potato fries

  • 4 large sweet potatoes, washed and peeled
  • 1/4 cup organic coconut oil
  • Salt and pepper to taste

Directions:

  1. In a bowl add all of the ingredients for the sweet tahini dip. Mix very well and set aside.
  2. Preheat the oven to 375 degrees F and line a large baking pan with parchment paper.
  3. Cut each sweet potato into thin strips or wedges and place into a large bowl. Drizzle with the coconut oil and season with salt and pepper. Using your hands toss the sweet potato fries making sure they are evenly coated with the coconut oil and seasonings.
  4. Pour the fries onto the baking sheet and spread them into a single layer. Bake uncovered for about 30-35 minutes tossing half way through.
  5. Remove from the oven and place the fries on a serving platter. Serve warm with the sweet tahini dip.
