Are you ready for ramen? If you haven’t tried a ramen burger yet, now is your chance! For a Meatless Monday meal, we’ve cooked up a meatless version — a veggie ramen burger with spicy mayonnaise — that is fun to serve and eat.
Dine on this dish to be up on the latest food trends and enjoy a fun treat while you’re at it. Fix your favorite veggie burger and include the toppings of your choice. We added Swiss cheese, avocado and arugula.
Veggie ramen burger with spicy mayo recipe
Serves 1
Ingredients:
For the bun and burger
- 1 package ramen noodles
- 1 egg
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
- 2 tablespoons olive oil, divided
- 1 veggie burger
- 1-2 ounces arugula, as topping
- 3-4 avocado slices, as topping
- 1 slice Swiss cheese, as topping
For the spicy mayo
- 2 tablespoons mayonnaise
- 1 teaspoon hot sauce like Sriracha
Directions:
For the spicy mayo
- Mix the mayonnaise and hot sauce and refrigerate until ready to use.
For the bun and burger
- Bring 2 cups of water to a boil. Add the ramen noodles (do not add the flavor packet) and cook for about 3 minutes.
- Remove from the heat and drain the noodles.
- Add the egg to a bowl and whisk it. Add the noodles to the egg and season with the salt and pepper. Toss the noodles so the egg fully coats them.
- Divide the noodles in half and add them to two large ramekins or wide-bottomed mugs that are a bit larger than the size of your veggie burger.
- Cover each with plastic wrap and set a can of soup over each to help flatten the noodles a bit. Refrigerate for 15 minutes.
- Remove the noodles from the refrigerator. Heat 1 tablespoon of olive oil. When hot, carefully add one of the noodle “buns” and cook for about 3 minutes. Flip and cook for another 3 minutes or until golden.
- Repeat with the remaining olive oil and noodles.
- Cook your veggie burger according to the package directions. Add one of the noodle buns to a plate. Spread on the spicy mayo, add the veggie burger and your toppings and top with the remaining bun.
- Serve hot.
