Meatless Monday: Veggie club sandwiches with garlic-avocado spread

This mile-high sandwich is loaded with great ingredients! It’s the perfect sandwich to satisfy your hunger on a Meatless Monday.

Standard club sandwiches include deli meats and mounds of mayo, but this Meatless Monday recipe lightens things up. Veggie club sandwiches with garlic-avocado spread are piled high with fresh finds like spinach, tomatoes and cucumber. The best part might be the garlic-avocado spread. It’s a creamy delight that is perfect on these sandwiches. The spread is enough for two veggie club sandwiches, but the ingredients below will make one sandwich. Double the recipe as needed.

Veggie club sandwiches with garlic-avocado spread recipe

Yields 1 sandwich

Ingredients:

For the spread

  • 1 large avocado
  • 1 garlic clove
  • 1/4 teaspoon salt, plus a pinch extra
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon lemon juice

For the sandwich

  • 3 slices sandwich bread, toasted
  • 4 slices veggie bacon, cooked until crisp
  • 1 cup loosely packed fresh baby spinach leaves
  • 1/2 medium tomato, cut into 1/4-inch-thick slices
  • 1/2 cucumber, partially peeled and cut into 1/4-inch-thick slices
  • 2 slices cheddar cheese
  • 4 toothpicks

Directions:

For the spread

  1. Peel and remove the pit from the avocado. Spoon the avocado into a small food processor or small bowl.
  2. Mince the garlic and place the 1/4 teaspoon salt on a clean cutting board. Use a fork to mash the garlic into the salt until a paste forms.
  3. Add the garlic, lemon juice, extra salt and black pepper to the food processor or bowl.
  4. Pulse until the ingredients are well mixed. If you’re not using the processor, use the back of a fork to mash the avocado and mix the other ingredients together.
  5. Set the spread aside.

For the sandwich

  1. Smooth the avocado spread over one side of one piece of toasted bread. Add two pieces of veggie bacon on top of the spread, cutting them in half if needed.
  2. Pile half the spinach over the bacon, top with half the tomato slices, then half the cucumber slices, and one slice of cheese.
  3. Smooth the avocado spread over both sides of a second piece of toasted bread and place it on top of the above ingredients.
  4. Repeat the layers with the remaining ingredients, add the spread to one side of the last piece of toasted bread, and top the sandwich with it.
  5. Use a sharp serrated knife to carefully slice the sandwich into quarters. Slice once diagonally, then again in the opposite direction.
  6. Use the toothpicks to secure each quarter of the sandwich, and serve.
