Gluten-free Goodie of the Week: Stuffed, maple-glazed baked apples

You’ll need a knife and fork (and maybe even a spoon) to eat up this Gluten-free Goodie of the Week recipe for stuffed, maple-glazed baked apples. This fall, you couldn’t ask for a more delightful goodie! The best of the season’s flavors, including maple, cinnamon and walnuts are combined in these baked apples for a warming and classic treat.

Stuffed, maple-glazed baked apples recipe

Serves 2

Ingredients:

  • 2 large baking apples (like Jonagold or Braeburn)
  • 1/3 cup maple syrup
  • 1/2 cup gluten-free rolled oats
  • 2 tablespoons brown sugar
  • 2 tablespoons chopped walnuts
  • 2 tablespoons dried cranberries
  • 1 teaspoon cinnamon
  • Vanilla ice cream as topping (optional)

Directions:

  1. Preheat your oven to 400 degrees F.
  2. Starting with clean apples, slice the tops off of each. Use a melon baller or paring knife to remove the core and to cut away part of the inside of the apple. Work your way around the inside center of the apple and down, to make enough space to stuff the apple.
  3. Add the maple syrup to a small bowl, and add 3 tablespoons of water. Stir to mix. Add 2 teaspoons of the maple syrup mixture to the bottom of each baking ramekin that is big enough to snugly hold each apple. Reserve the extra maple syrup mixture.
  4. Add the gluten-free rolled oats, brown sugar, walnuts, cranberries and cinnamon to a bowl and mix.
  5. Add 2 tablespoons of the maple syrup mixture to the rolled oats mixture and mix well.
  6. Place each apple in the prepared ramekins. Use a spoon to add the rolled oats mixture into the apples, packing them, and mounding the filing slightly.
  7. Cover each apple with aluminum foil and bake for 25-30 minutes. Remove the foil and drizzle the remaining maple syrup mixture over the tops and down the sides of each apple. Bake, uncovered, for another 5-10 minutes or until the topping begins to turn golden.
  8. Remove from the oven and allow to cool for about 5 minutes.
  9. Carefully place each ramekin on a serving dish, top with vanilla ice cream if using, and serve. Remind your guests that the apples and the contents may still be quite hot.
