- 1 cup brown lentils
- 2 tablespoons olive oil
- 1/4 cup diced white onion
- 1/4 cup diced carrot
- 1 celery stalk, diced

- 3 cups gluten-free, low-sodium vegetable broth
- 1 tablespoon chopped fresh rosemary
- 3/4 pound new potatoes, large diced
