Thanksgiving leftovers pizza recipe

They say the best thing about Thanksgiving leftovers is that they’re even better the next day! Never has that sentiment been so true, than with this Thanksgiving leftover pizza!

Here we took a store-bought pizza dough, rolled it out rustic style and topped it with some classic Thanksgiving leftovers! Stuffing, mashed potatoes, cranberry sauce and turkey… come together with Gorgonzola cheese, thinly sliced red onion and a few salad greens to make a beautiful pizza your friends and family will devour!

Pizza recipe using Thanksgiving leftovers

Serves 2-4

Ingredients:

  • Store-bought pizza dough, room temperature
  • Leftover stuffing
  • Leftover mashed potatoes
  • Leftover cranberry sauce
  • Leftover turkey, shredded
  • Small red onion, thinly sliced
  • 2-3 ounces Gorgonzola cheese (or cheese of choice)
  • Handful of mixed salad greens, roughly chopped
  • 1 teaspoon garlic powder
  • Olive oil
  • Salt and pepper
  • Hot pepper flakes and oregano for topping (if desired)
  • All-purpose flour for dusting dough
  • Cornmeal to keep dough from sticking to pan

Directions:

  1. Place a pizza stone or flat cookie sheet into the oven and preheat oven to 425 degrees F (bake setting if available).
  2. Dust a small handful of flour onto a clean, cool, flat surface. Roll out your pizza dough to desired shape (don’t worry about making a perfect circle, a misshaped dough gives your pizza a beautiful, rustic look).
  3. Once oven is preheated and pizza stone or cookie sheet it hot, using oven mitts, remove stone or pan from the oven and dust it lightly with cornmeal. Place rolled out dough directly onto the stone or sheet and place back in the oven for about 5 minutes, or until the dough is hardened a bit and set. Remove from the oven.
  4. Brush par-cooked dough lightly with olive oil. Sprinkle with a touch of salt and garlic powder and top pizza dough with desired Thanksgiving leftovers.
  5. Top pizza with red onion and cheese. Drizzle entire pizza with a touch of olive oil and place back on the pizza stone or sheet and bake in the oven until cheese is melted and dough is lightly browned and crisp, about 5-8 minutes.
  6. Top pizza with salad greens, additional olive oil, salt, pepper, red pepper flakes and oregano if desired. Serve.

TIP

To avoid the turkey from drying out too much, place the shredded turkey close to or underneath the cheese and/or cranberry sauce. This will get the turkey hot without overdrying. (Leaving some turkey exposed is also fine, as you want some to be visible for presentation.)
