Buffalo roasted chickpeas
Serves 4-6
Ingredients:
- 1 (15 ounce) can chickpeas, drained, rinsed and patted dry
- 2 tablespoons Buffalo sauce
- 1/2 tablespoon butter
- 1/4 teaspoon kosher salt
- 1/4 teaspoon garlic powder
- 1/8 teaspoon black pepper
Directions:
- Preheat oven to 450 degrees F and grease a baking sheet.
- Melt the butter and mix together with the Buffalo sauce in a small bowl.
- Add the chickpeas to a large bowl, pour the Buffalo sauce and butter mixture into the bowl.
- Add the spices to the bowl and toss to combine.
- Spread the chickpeas out onto the baking sheet in a single layer.
- Roast for 20-25 minutes, shaking the pan occasionally so they don’t burn.
- Remove from the oven once crispy. Serve immediately.

Battered baked cauliflower Buffalo bites
Serves 4-6
Ingredients:
- 1 head cauliflower, broken into small florets
- 1/3 cup milk
- 1/2 cup whole wheat white flour (all-purpose flour will also work)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
- Dash cayenne pepper
- 1/4-1/2 cup water
- 1/3 cup Buffalo sauce
- 1 tablespoon butter
Directions:
- Preheat oven to 450 degrees F, line a baking sheet with foil and grease with baking spray.
- Mix the milk, flour, garlic powder, cayenne pepper, salt and pepper in a bowl.
- Start with 1/4 cup of water and add to the flour/milk mixture, stirring to combine. Depending on how thick you want your batter either leave it as is or add more water to thin it out.
- Dip the cauliflower into the batter and place on the baking sheet.
- Bake for 20 minutes until golden brown and crispy.
- Remove the cauliflower from the oven, melt the butter and combine with the Buffalo sauce in a small bowl and drizzle over the cauliflower. Toss the florets to fully coat them with the sauce.
- Return to the oven and bake for another 10 minutes.
- Remove from the oven, serve warm with celery and blue cheese or ranch dressing.

Buffalo hummus
Serves 4-6
Ingredients:
- 1 (15 ounce) can chickpeas, drained and rinsed
- 2 cloves garlic
- Juice of 1/2 lemon
- Salt and pepper, to taste
- 2 tablespoons Buffalo sauce
- 2 tablespoons extra-virgin olive oil
Directions:
- Combine all ingredients in a food processor except the olive oil.
- With the processor running, drizzle in the olive oil.
- Process until smooth and creamy.
