Buffalo roasted chickpeas

Serves 4-6

Ingredients:

  • 1 (15 ounce) can chickpeas, drained, rinsed and patted dry
  • 2 tablespoons Buffalo sauce
  • 1/2 tablespoon butter
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon black pepper

Directions:

  1. Preheat oven to 450 degrees F and grease a baking sheet.
  2. Melt the butter and mix together with the Buffalo sauce in a small bowl.
  3. Add the chickpeas to a large bowl, pour the Buffalo sauce and butter mixture into the bowl.
  4. Add the spices to the bowl and toss to combine.
  5. Spread the chickpeas out onto the baking sheet in a single layer.
  6. Roast for 20-25 minutes, shaking the pan occasionally so they don’t burn.
  7. Remove from the oven once crispy. Serve immediately.

Battered baked cauliflower Buffalo bites

Serves 4-6

Ingredients:

  • 1 head cauliflower, broken into small florets
  • 1/3 cup milk
  • 1/2 cup whole wheat white flour (all-purpose flour will also work)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • Dash cayenne pepper
  • 1/4-1/2 cup water
  • 1/3 cup Buffalo sauce
  • 1 tablespoon butter

Directions:

  1. Preheat oven to 450 degrees F, line a baking sheet with foil and grease with baking spray.
  2. Mix the milk, flour, garlic powder, cayenne pepper, salt and pepper in a bowl.
  3. Start with 1/4 cup of water and add to the flour/milk mixture, stirring to combine. Depending on how thick you want your batter either leave it as is or add more water to thin it out.
  4. Dip the cauliflower into the batter and place on the baking sheet.
  5. Bake for 20 minutes until golden brown and crispy.
  6. Remove the cauliflower from the oven, melt the butter and combine with the Buffalo sauce in a small bowl and drizzle over the cauliflower. Toss the florets to fully coat them with the sauce.
  7. Return to the oven and bake for another 10 minutes.
  8. Remove from the oven, serve warm with celery and blue cheese or ranch dressing.

Buffalo hummus

Serves 4-6

Ingredients:

  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 2 cloves garlic
  • Juice of 1/2 lemon
  • Salt and pepper, to taste
  • 2 tablespoons Buffalo sauce
  • 2 tablespoons extra-virgin olive oil

Directions:

  1. Combine all ingredients in a food processor except the olive oil.
  2. With the processor running, drizzle in the olive oil.
  3. Process until smooth and creamy.
