Ingredients:

  • 9 ounces pork belly
  • 1 teaspoon peppercorns
  • Salt
  • Olive oil
  • 9 ounces tofu, diced
  • 1/4 cup vinegar
  • 1/8 cup soy sauce
  • Ground black pepper
  • Chili, seeded and chopped
  • Chives, finely chopped
  • Pink peppercorns (optional)
  • 1 medium onion, sliced

Directions:

  1. Fill a pot with water and add the pork. Over medium to high heat, bring it to a boil. When it boils, cover and simmer for 30 minutes or more or until the meat becomes tender. Drain.
  2. Slice the pork to bite sizes, the same size as the tofu. Set aside.
  3. Over medium heat in a frying pan with olive oil, fry the tofu. When it is cooked through and toasted, set the pieces on a plate with paper towels to absorb the excess oil.
  4. In a small bowl, mix the vinegar, soy sauce and black pepper.
  5. Transfer the tofu and pork in a serving bowl. Pour the vinegar dressing on them.
  6. Garnish with the chili, chives and pink peppercorns if using.
