Griddle-cooked salmon with soy-ginger sauce recipe
Serves 4
Ingredients:
- 1/4 cup soy sauce
- 1 tablespoon lemon juice
- 1/2 teaspoon grated fresh ginger
- 1/2 teaspoon honey
- 2 pounds salmon fillet
- Salt
- Fresh parsley or fennel for garnishing, finely chopped (optional)
Directions:
- In a small bowl, mix the soy sauce, ginger, honey and lemon juice. The amount of lemon juice depends on how you want the sauce to taste.
- Over medium-high heat, on a hot griddle without any oil, place the salmon with the skin side down. Do not move or touch it until you see that the color of the cooked meat is already more than halfway done (looking at the part touching the griddle going up). Sprinkle with salt. Note: Maintain the medium-high heat to toast the skin well. You can press the salmon down occasionally.
- When it is more than halfway cooked, turn the salmon carefully to cook the other side.
- As soon as the salmon is cooked, drizzle some sauce on top. Set aside some for drizzling on the individual plates.
- Sprinkle with the herbs.
