This Gluten-free Goodie of the Week recipe for cinnamon-peach waffles with peach topping will definitely brighten your day. It might be winter, but that doesn’t mean we can’t enjoy some sweet, vibrant peaches with our meals.
Pick up a jar or can of cling peaches at the grocery store to use for this recipe. They’ll go into the waffle mix, as well as serve as the main ingredient for the topping. I love adding peaches to dessert recipes, but don’t forget to include them in your breakfast recipes, too. They’re bright and sweet and can liven up any dreary day. This recipe makes 5 (6 inch) waffles, with enough topping for all of them.
Cinnamon-peach waffles with peach topping recipe
Serves 3-5
Ingredients:
For the topping
- 1/4 cup maple syrup
- Juice from 1/2 lemon
- 1/2 teaspoon ground cinnamon
- 12 ounces yellow cling peaches in juice (reserve a few slices for the waffle mix)
For the waffles
- 2 eggs
- 1/2 cup milk
- 6 ounces gluten-free peach yogurt
- 2 peach slices, cut into small cubes
- 1 cup gluten-free all-purpose baking flour
- 2 tablespoons brown sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon gluten-free baking powder
- 1 teaspoon baking soda
- Dash salt
- Nonstick cooking spray
Directions:
For the topping
- Add the maple syrup, lemon juice and ground cinnamon to a small saucepan and stir to combine.
- Add the peaches and their juice to the saucepan. Carefully mix to combine.
- Bring to a boil and allow the mixture to boil for approximately 3-4 minutes, stirring occasionally.
- Simmer the mixture for 8-10 minutes until it thickens. Remove from the heat and allow it to cool slightly.
- Keep warm until ready to serve, then transfer the topping to a bowl or small serving container.
For the waffles
- Preheat a waffle iron. Lightly spray the sections with the nonstick cooking spray.
- Add the eggs to a medium bowl and beat them slightly. Add the milk, then fold in the yogurt and the cubed peaches. Stir to combine the mixture.
- In a separate medium bowl, add the flour, brown sugar, cinnamon, baking powder, baking soda and salt. Whisk to combine.
- A little at a time, add the egg mixture to the flour mixture, stirring until combined and smooth.
- When the waffle iron is hot, add the batter to the waffle sections. Bake until lightly crisp and golden. Remove from the waffle iron.
- Serve warm with the peach topping.
