Gluten-free banana squares with banana-cream frosting recipe

Makes 9 squares

Ingredients:

For the squares

  • 1-1/4 cups gluten-free baking flour
  • 1-1/2 teaspoons gluten-free baking powder
  • 1/8 teaspoon salt
  • 2 eggs
  • 3 tablespoons butter, softened
  • 1/3 cup milk
  • 1 teaspoon vanilla
  • 1-1/2 mashed ripe banana
  • 3/4 cup brown sugar
  • Nonstick cooking spray
  • 1/3 cup chocolate chips or chopped nuts (optional)

For the frosting

  • 4 ounces cream cheese, softened
  • 3 tablespoons mashed ripe banana
  • 1/2 cup confectioners’ sugar (a bit more, as needed to thicken)

Directions:

For the squares

  1. Preheat your oven to 350 degrees F. Lightly spray an 8 x 8-inch baking pan with the cooking spray, and set it aside.
  2. Add the flour, baking powder and salt to a large bowl, and whisk to combine.
  3. In a separate large bowl, add the banana, brown sugar, eggs, milk and vanilla. Use a mixer to blend the ingredients together until smooth.
  4. A little at a time, add the dry ingredients to the wet ingredients and stir until combined and smooth.
  5. If you’re using chocolate chips or chopped nuts, fold them into the batter now.
  6. Pour the batter into the baking pan and bake for about 20-25 minutes, or until a knife inserted into the center comes out clean.
  7. Completely cool the cake before cutting it into squares, removing from the pan and frosting.

For the frosting

  1. Add the cream cheese and banana to a bowl and use a mixer to blend until smooth. Add the confectioners’ sugar to the bowl, and blend until incorporated.
  2. When the cake has cooled completely, cut it into squares, remove from the pan, then frost.
