Peanut butter cups in a waffle — need we say more?

I eat a Reese’s cup for breakfast probably once a week. I’m not ashamed to admit that either, because, well, peanut butter and chocolate. My husband judges this very strongly and lectures me on the importance of “healthy eating,” so to spite him, I made these waffles. Whole wheat flour makes them healthy; Reese’s cups makes them incredible.

I actually don’t want to eat another plain Reese’s cup after having these waffles. The rich peanut butter flavor in the waffles paired with the lusciously creamy peanut butter cups makes for the most decadently sinful breakfast you’ll ever have.

Double peanut butter cup waffles recipe

Serves 6

Ingredients:

  • 2 cups whole wheat flour
  • 1/4 cup all-purpose flour
  • 4 teaspoons baking powder
  • 1/2 cup creamy peanut butter
  • 2 1/2 tablespoons brown sugar
  • 2 large eggs, room temperature
  • 1 cup water
  • 1 1/4 cups 1 percent milk
  • 1/4 cup unsweetened applesauce
  • 1/2 cup chocolate chips
  • 1/2 cup peanut butter chips
  • 3/4 cup chopped Reese’s cups
  • Chocolate sauce

Directions:

  1. Preheat a waffle iron, and spray it with nonstick cooking spray.
  2. In a large bowl, whisk together the flours and baking powder. Add the peanut butter, brown sugar, eggs, water, milk and applesauce, and stir to combine. Stir in the chocolate chips, peanut butter chips and 1/2 the Reese’s cups.
  3. Scoop about 1 cup of batter onto the hot waffle iron. Close, and cook for about 3 minutes or until the waffle iron beeps (or waffles are golden brown on both sides).
  4. Drizzle the waffles with chocolate sauce, and top with the remaining Reese’s cups.
