Frittata in Italian or omelet in English, we can call it whichever we want. The bottom line is that it’s the perfect quick egg dish to put together using any ingredients we have on hand. This time I’ve decided to get fancy and make them into roll-ups.
We have the eggs and the grated Parmesan. The oven is burning hot. Let’s start cooking and rolling.
Egg roll-ups base recipe
Yields 8 rolls in an 8 x 12-inch sheet pan
Ingredients:
- 6 eggs
- 1/8 cup grated Parmesan cheese
- Salt
- Pepper
Directions:
- Preheat the oven to 350 degrees F.
- In a bowl, whisk together the eggs, Parmesan, salt and pepper.
- Line the baking pan with baking paper, and then pour the egg mixture into the pan.
- Bake for 15 minutes on the middle rack.
- On a piece of plastic wrap bigger than the pan, laid flat on your work area, place the cooked egg while it is still warm.
- Add the other ingredients while still warm to allow easier rolling. (See recipes below.)
Ham and cheese egg roll-up recipe
Ham and cheese are probably the easiest ingredients to put together in a roll-up. They also never fail to give excellent results no matter the kind of ham and cheese you use. It’s that kind of combination you can always rely on.
Yields 8
Ingredients:
- 3 ounces cream cheese
- 4-6 slices ham (any ham of your choice), amount depends on the size per slice
- 6-8 slices cheese (any cheese of your choice), amount depends on the size per slice
- 1 cooked egg roll-up (from the base recipe)
Directions:
- Spread the cream cheese evenly onto the cooked egg.
- Top with the ham and then the cheese.
- Roll the egg tightly with the help of the plastic wrap.
- Tighten the plastic wrap, and leave the roll-up for at least 10 minutes to retain the shape.
- Carefully unwrap the plastic, and slice the roll-up with a very sharp knife.
Smoked salmon, cream cheese and
chives egg roll-up recipe
Smoked salmon might not be the cheapest option, but in the flavor department, it’s a very good choice. Paired with cream cheese and chives, the three ingredients work together like magic. It is one of my all-time favorite combinations in crostini, pizzas or sandwiches.

- 3 ounces cream cheese
- 4-6 slices smoked salmon, amount depends on the size per slice
- 1 tablespoon fresh chives, finely chopped
- 1 cooked egg roll-up (from the base recipe)
Directions:
- Spread the cream cheese evenly onto the cooked egg.
- Top with the smoked salmon, and then sprinkle on the chives.
- Roll the egg tightly with the help of the plastic wrap.
- Tighten the plastic wrap, and leave the roll-up for at least 10 minutes to retain the shape.
- Carefully unwrap the plastic, and slice the roll-up with a very sharp knife.
Harissa and grilled pepper egg roll-up recipe
Slightly spicy but amazing, harissa is simply a great sauce to slather onto a frittata. At first I was dubious about using it, but when I paired it with the grilled peppers and fennel seeds, I discovered another combination of flavors that is absolutely great. My verdict? You cannot skip this one.

- 4 tablespoons harissa sauce
- 1 cup bottled grilled peppers
- 1/2 teaspoon fennel seeds
- 1 cooked egg roll-up (from the base recipe)
Directions:
- Spread the harissa sauce evenly onto the cooked egg.
- Top with the grilled peppers, and then sprinkle on the fennel seeds.
- Roll the egg tightly with the help of the plastic wrap.
- Tighten the plastic wrap, and leave the roll-up for at least 10 minutes to retain the shape.
