Today’s foodies are enjoying the fresh food and exciting menus of today’s food trucks, which have swapped out greasy and high-calorie treats for organic meals chock-full of superfoods. We have rounded up some of the best healthy food trucks across the country.
Mtn Roots Food Trucks — Lake Tahoe, California
The Squaw Valley and Alpine Meadows resorts feature the Mtn Roots Food Trucks to serve their guests that feature an eclectic mix of regionally and sustainably sourced food. You can pick up quick bites or a meal — and you will never get bored because the menu rotates depending on which ingredients are available locally so you are are always guaranteed a fresh meal.
“The Mtn Roots Food Trucks have been an awesome addition here at Squaw Valley and Alpine Meadows. With skiers and snowboarders in the winter and bikers and hikers in the summer, there are always hungry visitors to keep fueled up with fresh healthy food. And by partnering with Tahoe Food Hub to locally source many of the ingredients, we’re remaining committed to the ecological and nutritious well-being of our community,” says Amelia Richmond, spokesperson for Squaw Valley and Alpine Meadows.
HipPOPS — Southern Florida
HipPOPS is not your average ice cream truck. In fact, it is America’s first all-natural, gluten-free and kosher mobile premium gelato-on-a-stick concept. This bright and colorful food truck has won several awards, including Sun Sentinel G.T.E. Street Food Rumble for Best Dessert. Their ice cream is made from ingredients sourced locally whenever possible, and made in small batches daily so you know it is always fresh. They use dairy-free sorbet, and their treats do not have high-fructose corn syrup or growth hormones. Choose from a variety of flavors of gelato, yogurt or sorbet.
The Silver Seed — Fort Collins, Colorado
Not only is The Silver Seed food truck full of vintage charm, but it is full of yummy and healthy food as well. You will find an exciting and fresh menu of soups, salads, juice and smoothies with ingredients that are organic and locally sourced.
“We want to re-establish the connection between farmers and restaurants. It will all be really fresh, crisp, delicious stuff,” says Taylor Smith, who opened the food truck with Melanie Boyna to showcase the array of local agriculture and CSA-sourced food available in their community.
Fuel Food Truck — Asheville, North Carolina
The Fuel Food Truck is the brainchild of Josh Winnecour, a nurse and former administrator for a child and adolescent weight-loss program who, after losing 50 pounds himself, wanted to make it his life’s work to help others make similar changes by offering healthy food.
“Our truck is called FUEL and our tag line is ‘Feeding Your Fitness.’ FUEL is a quick and delicious resource for folks who prioritize their health and fitness,” Winnecour tells SheKnows. “Our food is nutrient-dense, gluten-free, and honors all cultures’ nourishing traditions. Served daily from our truck, our food is a unique alternative to the standard manufactured fare. We are a favorite of many vegetarians and vegans in town as well anyone looking for clean, wholesome, scratch-made food without added sugar and preservatives.”
BC Tacos — Florida
Craving a taco — but watching your waistline? If you are in the South Florida community from Jupiter all the way down to Miami, you have to check out BC Tacos. This mobile food truck offers delicious and healthy gourmet tacos. If you want to limit carbs and cut back on calories, ask for the Brontosaurus Bowls, which swap out the regular taco shell for a lettuce cup.
TaKorean — Washington, D.C.
TaKorean serves Korean flavors with a Mexican twist — and they are Washington D.C.’s first and most popular Korean Taco truck.
“TaKorean serves fantastic vegetarian and vegan options daily, along with our Korean seasoned meats,” says owner Mike Lenard. “You can enjoy a choice of Korean style Bulgogi Beef, Tangy Chicken, or Caramelized Tofu tacos topped with fresh spicy or mild slaw, lime crema, Sriracha chili sauce, fresh cilantro and sesame seeds on top of warm corn tortillas.”
Their Union Market location even serves a rotating craft beer selection. Cheers!
Organic Gypsy — Kalamazoo, Michigan
Launched by Bridgett Blough in 2011, the Organic Gypsy food truck is as healthy as it sounds. It features GMO-free, pasture-raised meats, organically-grown vegetables as well as fruits and grains all from local sources. She makes all of her own sauces from scratch. Even their to-go ware is compostable and from renewable resources. Blough recently partnered with KitchenAid to promote the 75th Senior PGA Championship, which is taking place next weekend in Benton Harbor, Michigan.
Plum Burgers — Seattle, Washington
The Plum Burgers food truck was started by Chef Makini Howell, who is also the owner of Plum Bistro, Plum Cafe and Plum Burgers, as well as the author of Plum, a vegan cookbook. Her vegan burger food truck serves vegetarian delights that aims to blast that myth vegan food is bland — and she hopes to make vegan believers one customer at a time. She has won over A-list clients like Ben Affleck, Jennifer Garner, Joaquin Phoenix, Liv Tyler and more.
Truck Pizza — Upstate New York
If you are craving a healthy pizza, you have to check out the Truck Pizza, which is known for their freshly-made brick oven Neapolitan pizza and homemade San Marzano tomato sauce. Truck Pizza is affordably priced, as well. You will find owner Alvaro Medina and his truck during the summer at Food Trucks and Kiosks at 3FortySeven, which was designed by architect Michael Davis.
The Original Greek — Miami, Florida
The Original Greek just launched this year and it offers healthy Mediterranean cuisine with an emphasis on quality ingredients. Their food is vegan- and gluten-friendly and they use only fresh and all-natural foods. Some of their mouth-watering food includes traditional handmade tzatziki sauce, fried cheese in brandy (saganaki), spinach and feta pie (spanakopita), rustic islander salad, baklava and much more.
