Red, white and blue star-shaped pancakes threaded onto a skewer make the perfect festive breakfast this 4th of July.
We love pancakes and waffles at my home. It’s become a tradition to have either pancakes or waffles every Saturday, and I always look forward to it.
But the same pancake mix every time can get a little boring, which is why we sometimes jazz it up a bit, and chocolate chips, berries or raisins get mixed into the batter. However, when a holiday is coming up, I love dying the batter to create a fun and festive breakfast.
Start off by making the pancake batter. Then pour 1/3 of the batter into 1 bowl and another 1/3 into another bowl. The remaining batter can stay in the original bowl and will become the white stars.
Next, dye 1 bowl of batter with red food coloring and the other bowl with blue food coloring.
While you are mixing the colors, preheat the skillet on the stovetop to medium heat. Don’t forget to spray the skillet with nonstick cooking spray to make for easy removal of these pancakes.
Next, you will use up all the batter to create the pancakes. This recipe provides 2 red pancakes, 2 blue and 1 very large white pancake.
Once your pancakes are cooked, they are ready to be cut into stars. I used a very small star cookie cutter, but a larger one can be used too — whatever your preference is for the final size you want.
Press the star into the pancake, and jiggle the cutter to make sure it cuts completely through. Once you have your star, set it aside, and continue to cut more stars.
Make sure to cut the stars close to one another to use up as much of the pancake as possible. And what about all those extra scraps? They are perfect for a little snack.
Once you have all your stars cut out, thread them onto a skewer, alternating the colors of red, white and blue.
And once they are threaded on the skewer, they are ready to be eaten.
With a large glass of milk, of course.
Star pancake skewers recipe
Serves 2-3
Ingredients:
- 3/4 cup whole milk
- 2 tablespoons lemon juice
- 1 cup flour
- 1 teaspoon baking powder
- 1 tablespoon white sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg
- 2 tablespoons butter, melted
- Red food dye
- Blue food dye
- Skewers
- Star cookie cutter
Directions:
- Whisk together the milk and lemon juice, and allow the mixture to stand for 5 to 7 minutes.
- In the meantime, in a separate bowl, stir together the flour, baking powder, sugar, baking soda and salt. Set it aside.
- Whisk the egg in with the milk mixture, and then whisk in the butter.
- Stir in the flour mixture until combined.
- Separate the mixture into 3 bowls, and dye 1 bowl red, 1 blue, and leave the last bowl of batter as is.
- Preheat a pancake griddle or skillet to medium heat.
- Pour the batter onto the skillet, and cook until bubbles appear on 1 side. Flip the pancake, and cook until lightly browned on the other side.
- Remove, and cut the pancakes into star shapes.
- Thread a skewer with the stars in alternating colors.
