- 1/2 cup butter
- 1/2 cup packed brown sugar
- 1/2 cup white sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 cup flaked coconut
- 1/3 cup white chocolate chips

Directions:

- Preheat the oven to 350 degrees F. Hand-mix the flour, baking soda, cocoa powder and salt together in a medium-size bowl.
- In a separate bowl, cream the room-temperature butter and sugars with a hand mixer until smooth. Beat the egg and vanilla, then gradually mix in the dry mixture from your other bowl. Once mixed, stir in the coconut flakes and chocolate chips.
- Roll the dough into teaspoon-size balls and place them on ungreased cookie sheets about 2 inches apart. Bake for 10-12 minutes and remove the cookies from the tray to cool.
