Tomatillo martini

Ingredients:

- 4 medium-size, semiripe tomatillos
- 1 cup vodka
- 1 tablespoon sugar
- 1/2 cup sweet vermouth
- 1 teaspoon Grand Marnier (optional)
- 2-3 fresh mint leaves
- 5 ice cubes
- 1 teaspoon lemon juice (for martini glass)
- Dish of sugar (for martini glass)

Directions:

- Chill a martini glass in the freezer.
- Remove the skin of the tomatillos and wash them thoroughly, removing the underlying glue completely.
- Cut the tomatillos into quarter pieces and put them into a food processor. Run the food processor until the tomatillos are completely crushed.
- Strain the tomatillo puree, then squeeze all the tomatillo juice out of it (don’t discard the pulp since you can use it in soups).
- Strain the tomatillo juice at least three times so that none of the seeds from the tomatillo make it into the martini.
- Remove the martini glass from the freezer and line the rim with lemon juice.
- Press the glass upside down into the sugar dish so that the rim becomes well coated with sugar.
- Add the ice, the mint leaves and all the liquid ingredients into a martini shaker. Shake well.
- Pour the cocktail into the martini glass and serve immediately.
