t The base of this delicious dessert is “as American as apple pie”… the chocolate chip cookie. Chocolate chip cookies were born and bred right in the the U.S. The original cookie was baked by Ruth Wakefield, who owned a very popular restaurant in Whitman, Massachusetts named the Toll House… you can guess the rest of that story. I love to bake my own chocolate chip cookies, but you can easily use store-bought chocolate chip cookies as long as they are soft. If you are baking your own, be sure to under-bake your cookies by a minute or so.

t Gather your topping ingredients… the choices really are endless, but we especially love: fresh strawberries, crushed pretzels, peanut butter chips, sprinkles (Fourth of July colors make these even more festive), mini chocolate chips and heart candies. Peanuts or pistachios would be delicious too, as would toffee chips or mini marshmallows.
t As far as ice cream goes, there are so many choices and options. I love to go with the classics for these cookie sandwiches, but you could easily use your favorite flavor that has chunks or swirls already set in. For a healthier choice, opt for frozen yogurt. I placed my ice cream containers in a metal bowl with ice and waited till the last minute to put it out. You could always pop this entire setup back in the freezer if it gets too melty.

t Next step: Gather your friends and show them how to DIY their own cookie sandwiches.
t Turn a chocolate chip cookie upside down on a plate (or over a piece of plastic wrap if you are making these for later). Add three or four mini scoops of ice cream. Feel free to mix.

t Gently press another chocolate chip cookie over the ice cream scoops, making a sandwich.

t Spread the ice cream around the sides using a spoon or a spatula. Select a topping and roll the sides of the sandwich in the bowl or use a spoon to add toppings over the bowl. Some toppings will require a slight press into the ice cream. Have paper towels handy; the assembly could get a little messy, but that’s a big part of the fun.

t If you don’t have two ice cream scoopers, keep a glass of hot water handy to clean off your ice cream scoop between flavors.
