Super-easy homemade ice cream, no machine required

No ice cream maker? No problem. You don’t need another appliance cluttering up your kitchen anyway. Especially when you can make these simple, no-machine ice creams.


Ice cream is hands down my favorite dessert. My favorite flavor is chocolate, but the more mix-ins, the better. Growing up, we always made ice cream in our ice cream maker, but when I left for college, I didn’t have the money or the room for one. So I had to learn (and quickly) how to make ice cream without a machine. I still don’t have a machine but make these recipes all the time because I love them so much.

This tutorial is for a plain vanilla cheesecake ice cream, with three other delicious recipes for you to try out to amp up the flavors of the classic base.

Start out with some heavy whipping cream. You’ll whip it with a hand beater (or a stand mixer) until you reach stiff peaks. Once you have, set it aside.

The image on the left shows how your heavy whipping cream should look once it’s completely whipped and ready for the ice cream.

In a separate bowl, beat together 1 block of cream cheese and 1 can of sweetened condensed milk. You’ll want to beat it really well to make sure it is nice and smooth. Don’t forget to use softened cream cheese, or it will be a whole lot of work to get a smooth mixture.

Next, combine the 2 ingredients with a spatula or spoon (do not beat). You don’t want to overmix, so just stir them until combined.

Finally, spoon the mixture into a large resealable container. How easy was that?

You will want to place the mixture in the freezer overnight or until completely hardened. Once the mixture has completely frozen, it’s ready to eat. You can serve it with some hot fudge, caramel sauce or just plain with a cherry on top. Enjoy.

1. Vanilla cheesecake ice cream recipe

This vanilla cheesecake ice cream is anything but plain. It’s bursting with fresh and good flavors. With only five ingredients and an easy preparation, what are you waiting for?

Serves 8-10

Ingredients:

  • 2 cups heavy whipping cream
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (8 ounce) package cream cheese, softened
  • 2 teaspoons vanilla extract
  • Cherry, as a topping (optional)

Directions:

  1. In a large bowl, beat the heavy whipping cream until stiff peaks form. Place in the fridge.
  2. In another bowl, beat the cream cheese until smooth. Slowly add in the sweetened condensed milk, and beat until smooth and creamy. Stir in the vanilla extract.
  3. Gently fold the whipped cream into the cream cheese mixture.
  4. Place the ice cream mixture into a tightly resealable container, and put it in the freezer overnight.
  5. Once the ice cream is frozen, scoop out portions into a bowl, top with a cherry if desired, and enjoy.

2. Golden Oreo cheesecake ice cream recipe

This ice cream is packed with Golden Oreos, sprinkles and peanuts. It’s creamy, delicious and, with the massive amounts of sprinkles, will help you channel your inner child.

Serves 8-10

Ingredients:

  • 2 cups heavy whipping cream
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (8 ounce) package cream cheese, softened
  • 2 teaspoons vanilla extract
  • 1/3 cup chopped peanuts
  • 1 cup chopped Golden Oreos
  • 1/3 cup sprinkle jimmies
  • 1/4 cup nonpareil sprinkles
  • Cherry, as a topping (optional)

Directions:

  1. In a large bowl, beat the heavy whipping cream until stiff peaks form. Place in the fridge.
  2. In another bowl, beat the cream cheese until smooth. Slowly add in the sweetened condensed milk, and beat until smooth and creamy. Stir in the vanilla extract.
  3. Gently fold the whipped cream into the cream cheese mixture.
  4. Smash or chop the Golden Oreos into small chunks.
  5. Stir in the chopped peanuts, Golden Oreos and sprinkle jimmies.
  6. Place the ice cream mixture into a tightly resealable container, and put it in the freezer overnight.
  7. Once the ice cream is frozen, scoop out portions into a bowl, and sprinkle with nonpareil sprinkles. (You don’t use these in the main mix, as they will dye the ice cream.)
  8. Top with a cherry if desired, and enjoy immediately.

3. Chocolate Thin Mint cheesecake ice cream recipe

This ice cream is for the chocolate lover. It’s filled with crushed Thin Mints, chocolate chips and chocolate fudge. Triple chocolate makes for one decadent dessert.

Serves 8-10

Ingredients:

  • 2 cups heavy whipping cream
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (8 ounce) package cream cheese, softened
  • 1 teaspoon vanilla extract
  • 28 Thin Mint or Grasshopper cookies
  • 5 ounces milk chocolate chips
  • 1/2 teaspoon salt
  • 3 tablespoons hot fudge syrup
  • Cherry, as a topping (optional)

Directions:

  1. In a large bowl, beat the heavy whipping cream until stiff peaks form. Place in the fridge.
  2. In another bowl, beat the cream cheese until smooth. Slowly add in the sweetened condensed milk, and beat until smooth and creamy. Stir in the vanilla extract, salt and hot fudge syrup.
  3. Gently fold the whipped cream into the cream cheese mixture.
  4. In a large bag, smash or chop the Thin Mints. Remove, and stir them into the mixture.
  5. Stir in the chocolate chips.
  6. Place the ice cream mixture into a tightly resealable container, and put it in the freezer overnight.
  7. Once the ice cream is frozen, scoop out portions into a bowl, top with a cherry if desired, and enjoy immediately.

4. Monster cookie dough and M&M’s cheesecake ice cream recipe

This ice cream is fully loaded with all kinds of delicious treats. Eggless cookie dough, two types of M&M’s and peanut butter are all mixed into this decadent dessert.

Serves 8-10

Ingredients:

  • 2 cups heavy whipping cream
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (8 ounce) package cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/2 cup peanut butter M&M’s
  • 1/2 cup plain M&M’s
  • 3 ounces milk chocolate chips
  • 1/4 cup butter, softened
  • 2 tablespoons peanut butter
  • 1/4 cup brown sugar
  • 2 tablespoons white sugar
  • 1 tablespoon milk
  • Pinch salt
  • 2 tablespoons oats
  • 1/2 cup all-purpose flour
  • 1/4 cup miniature chocolate chips

Directions:

  1. In a large bowl, beat the heavy whipping cream until stiff peaks form. Place in the fridge.
  2. In another bowl, beat the cream cheese until smooth. Slowly add in the sweetened condensed milk, and beat until smooth and creamy. Stir in the vanilla extract.
  3. Gently fold the whipped cream into the cream cheese mixture.
  4. Stir in both types of M&M’s and the chocolate chips.
  5. In a large bowl, cream together the butter and peanut butter. Beat in both sugars, the vanilla, milk and salt.
  6. Stir in the oats and flour. Add the miniature chocolate chips.
  7. Form small balls of cookie dough, and stir them into the mixture.
  8. Place the ice cream mixture into a tightly resealable container, and put it in the freezer overnight.
  9. Once the ice cream is frozen, scoop out portions into a bowl, top with a cherry if desired, and enjoy immediately.
