Quick and easy broccoli-and-basil pesto spaghetti recipe

Serves 4-6

Ingredients:

  • 12 ounces spaghetti
  • 2 cups broccoli florets
  • 1/2 teaspoon minced garlic
  • 1/2 cup shredded Parmesan cheese, plus extra for topping
  • 1/2 teaspoon salt
  • 2 tablespoons slivered almonds
  • 5 basil leaves
  • 1/4 cup plus 3 tablespoons extra-virgin olive oil

Directions:

  1. In a large pot, bring water to a boil. Add the spaghetti noodles, and cook according to the package instructions.
  2. Into a food processor, add the rest of the ingredients. Blend until it reaches a smooth consistency. Remove, and toss with the drained noodles.
  3. Plate, and top with shredded Parmesan cheese.
