We have a constant supply of feta in our house. With a Greek husband, it’s just a necessity. He uses the stuff like he’ll never be able to eat it again. So when I put it inside a burger recently, he just about flipped out. In a good way, of course.
These burgers take the whole Greek thing to the next level. Made with lamb, they’re incredibly moist. They’ve got feta and Greek yogurt in the mix too, and then they’re topped with bacon. Because why not? Even Greeks love some bacon.
Lamb and bacon pita burgers with spicy tzatziki recipe
Serves 4
Ingredients:
For the burgers
- 1 pound ground lamb
- 1 teaspoon oregano
- Salt and pepper
- 1/4 cup plain Greek yogurt
- 1/3 cup minced red onion
- 1/4 cup crumbled feta cheese
- 4 slices cooked bacon
- 4 pitas, cut in half
- 1 tomato, sliced
- Handful baby spinach
For the tzatziki
- 1/3 cup plain Greek yogurt
- 1 garlic clove, minced
- 1/4 cup finely chopped cucumber
- 1/8 teaspoon dill
- 1/2-1 tablespoon Sriracha sauce (depending on spice preference)
- Salt and pepper
Directions:
- Preheat an outdoor grill or grill pan over high heat.
- In a large bowl, combine the lamb, oregano, salt, pepper, yogurt, red onion and feta, and mix together using a spatula or your hands until well combined.
- Form the mixture into 4 patties, and grill until the burgers are cooked to the desired temperature.
- Remove the burgers from the grill, and let them sit a few minutes.
- Meanwhile, make the tzatziki by combining all the ingredients in a small bowl and mixing them together.
- Spread the sauce on the inside of the pita. Layer a couple of tomato slices, bacon and baby spinach in the pita, and place the burger on top.
