Creamy no-bake spinach and sun-dried tomato dip

Do you ever find yourself thinking or saying aloud, “I’m always so busy!” or “Ugh, I wish I just had an extra hour in the day!” We do… all the time.

t When you’re trying to juggle family life, work/school, a social schedule and extracurricular activities, a small task like fixing yourself a healthy, midday work snack “pick me up” can seem daunting and almost not worth it. Although we always find that when we skip out on the much needed 3 p.m. energy-boosting treat we end up cranky, tired and by the time dinner rolls around we’re so hungry that we wolf our meal down in a few minutes and usually end up overeating and feeling sluggish.

t Sure, grabbing a handful of almonds is quick and filling but sometimes you want something a little more substantial and satisfying. Enter Laughing Cow wedges. Not only are the cheese wedges great for a quick “grab and go” situation, but they’re also so versatile that it’s easy to convert them into a whole other snack in itself.

t Today we’ve used one of our favorite flavors, creamy Swiss, to create a super-simple, quick and delicious dip: No-bake spinach and sun-dried tomato dip.

t Only a handful of ingredients and about seven minutes of your time are needed to create this easy and extremely transportable snack (all you need is a little Tupperware and you’re good to go). While we usually eat this dip with some fresh crudite and pita chips, it can also be used as a tasty spread on crackers or added to a sandwich for a flavor overload. So the next time you’re at work and you think about rummaging through your bag for some loose, lackluster vending machine change, plan ahead and make this quick and easy dip for a tasty midday treat. Enjoy!

Creamy spinach and sun-dried tomato dip

t Serves 2

Ingredients:

  • 4 Laughing Cow Creamy Swiss wedges
  • t

  • 1/4 cup frozen and chopped spinach, thawed and squeezed dry
  • t

  • 2 tablespoons diced sun-dried tomatoes (dry packed)
  • t

  • 1 tablespoon minced marjoram (oregano is fine)
  • t

  • 2 garlic cloves, minced

Directions:

  1. Place all ingredients into a mixing bowl and smash and mix together until thoroughly combined.
  2. t

  3. Serve with crudite of choice, pita chips or crackers.
