Fried rice with veggies is delicious on its own as a side dish, but add some teriyaki sauce and shrimp to the mix, and you have yourself a main dish in no time.
And not just any teriyaki sauce either. This one is homemade and easy to make. I like to reduce the teriyaki sauce down just a bit and then drench the shrimp in the sauce just before serving it over the fried rice.

Serves 2
Ingredients:
For the fried rice
- 1 tablespoon canola oil
- 1/2 an onion, chopped
- 1/2 cup chopped carrots
- 2 cups cooked white rice, chilled
- 4 garlic cloves, chopped
- 2 tablespoons soy sauce
- 1/2 cup frozen green peas (defrosted)
- 2 eggs, beaten
- 4 dashes ground black pepper
- 4 dashes salt (or salt to taste)
- 1 chopped green onion, for garnish
For the teriyaki shrimp
- 1/4 cup soy sauce
- 1 tablespoon hoisin sauce
- 1/4 teaspoon sesame oil
- 2 teaspoons sugar
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes
- 20 raw medium-size shrimp (peeled, deveined, with the tails on)
Directions:
For the fried rice
- Heat a large skillet or wok on medium heat.
- Add the canola oil, onion and carrots. Stir continuously.
- Let the vegetables cook for about 3 to 4 minutes, and then add the rice. Continue to stir.
- Add the garlic and soy sauce. Continue to stir as the rice cooks for about 7 minutes.
- Add the peas, and stir.
- Spoon the rice mixture to the sides of the pan, leaving an empty space in the middle.
- Add the beaten eggs to the empty space, and gently stir as the eggs scramble.
- As the eggs cook, mix them into the rice mixture.
- Add the pepper and salt.
- Transfer the rice into serving bowls.
- Top with the teriyaki shrimp, and garnish with green onion.
For the teriyaki shrimp
- To a medium-size bowl, add the soy sauce, hoisin sauce, sesame oil, sugar, rice vinegar, honey, garlic powder and red pepper flakes. Whisk together.
- Add the shrimp, and let marinate for about 1 hour.
- Heat a medium-size skillet on medium heat, and add just the shrimp to the pan (reserve the teriyaki sauce). Stir until thoroughly cooked, about 4 minutes.
- Remove the shrimp from the skillet, and set it aside.
- Add the teriyaki sauce to the skillet, and stir as it cooks until the sauce thickens, about 4 to 5 minutes.
- Add the shrimp back into the pan, and coat the shrimp with the sauce.
- Serve on top of the fried rice.
