Take your meatloaf game to new heights with this Thai-spiced version

Meatloaf is an American classic, there’s no doubting that. But that doesn’t mean this favorite has to be made the same ol’ way your mom and her mom did, right? Why not add some spice and a little culture to your loaf?

This spicy and delicious loaf is kicked up with Thai spices and sauces, giving it a very Southeast Asian flair. You might never go back to yo’ mama’s meatloaf again.

Thai spiced meatloaf recipe

Recipe adapted from Budget Bytes

Serves about 8

Ingredients:

  • 2 pounds ground turkey (we used one with 15 percent fat)
  • 3 cloves garlic
  • 4 green onions, chopped
  • 2 tablespoons Thai red curry paste
  • 1 teaspoon sesame oil
  • 2 large eggs
  • 1 cup bread crumbs
  • 1/2 cup jasmine rice, cooked
  • 3 tablespoons chopped bean sprouts
  • 1 tablespoon soy sauce

For the sauce

  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 6 tablespoons Sriracha sauce
  • 2 teaspoons corn starch + 2 tablespoons water
  • Dash of salt

Directions:

  1. Preheat oven to 375 degrees F. Grease a standard size loaf pan with nonstick cooking spray and set aside.
  2. In a large bowl, mix the turkey, garlic, green onions, red curry sauce, sesame oil, eggs, breadcrumbs, rice, chopped bean sprouts and soy sauce with your hands until fully mixed.
  3. Place the mixture into your prepared loaf pan and smooth the top over with a spatula.
  4. Bake the meatloaf for about 30 minutes.
  5. Meanwhile, make the glaze by whisking the honey, brown sugar, soy sauce, Sriracha and cornstarch + water mixture. After 30 minutes, drizzle half of the glaze over the meatloaf. Bake another 30 or so minutes, cover with remaining glaze and bake an additional 10 minutes.
  6. Let cool slightly in the pan then remove. Serve over jasmine rice with additional Sriracha for heat.
