Black velvet Bundt cake with a swirled Halloween surprise

I have to be honest with you guys about something. It’s hard to admit this, but I’m a terrible cake baker. Granted, I’ve gotten better with time, but I’m not the girl who can make a beautiful six-layer cake with stunning ruffled fondant icing at first (or 10th) try. But you know what? I made this amazing Bundt in one shot. No remakes or retries.

And that’s saying something. If I can make this cake in less than 30 minutes, then anyone can. This stunning surprise-inside cake will excite your Halloween party guests and shock your friends and family when they hear just how easy it is to make.

Really, all you have to do is open 2 boxes of cake mix (1 chocolate and 1 white pound) and mix according to the package instructions. Then you add some food dye to each to give it some vibrant colors.

You can really use whatever colors you want, but to me, Halloween is always black, orange and bright green. I’ve seen this cake made with purple, so you can do that too. I just had green on hand and didn’t feel like changing out of yoga pants to go to the store. After you mix, you layer the black velvet cake batter with the orange, the green and then more black velvet.

It’ll be so pretty you’ll almost not want to bake it. But you really should, since Halloween is not a time you want to spend with massive food poisoning.

After it’s baked, you let it cool.

After cooling, drizzle with some icing.

I used white (to make the black really pop), but you can use orange, green or whatever color you have on hand.

Then you add some sprinkles, slice into it, marvel at your handiwork and give yourself a giant pat on the back — or pour an extra-large glass of wine, because you totally deserve it.

Serves 8-10

Prep time: 20 minutes | Bake time: 40 minutes | Inactive time: 10 minutes | Total time: 1 hour 10 minutes

Ingredients:

  • 1 box devil’s food chocolate cake mix
  • 1 box standard pound cake mix
  • Eggs, canola oil and water called for on the boxes
  • Black food coloring
  • Orange food coloring
  • Green food coloring
  • White icing gel
  • Halloween sprinkles

Directions: 

  1. Preheat the oven to 350 degrees F. Grease a standard-size Bundt pan with nonstick cooking spray, and set aside.
  2. In a large bowl, mix the chocolate cake mix with the ingredients listed on the box. Stir to combine until there are no more lumps. Mix in black food coloring (I added 4 to 7 drops to get a darker color).
  3. In another bowl, mix the pound cake mix with the ingredients listed on the box. Stir to mix until there are no more lumps. Separate the batter into 2 bowls. Tint 1 bowl with orange food coloring and the other bowl with green food coloring.
  4. Pour 1/2 the chocolate batter into the Bundt pan. Top with equal amounts of orange-tinted batter and green-tinted batter. You can layer them, swirl them or make patterns — it’s up to you! Just don’t mix them together, or they won’t show up post-bake.
  5. Top the colored batter with 1/3 more of the chocolate batter. (You’ll have some chocolate batter left over to save for something else.)
  6. Bake for about 40 minutes or until a toothpick inserted in the middle comes out clean. Let cool for about 10 minutes in the pan, and then remove the cake, and place it on a wire cooling rack.
  7. Once the cake has completely cooled, drizzle with icing gel and sprinkles. Cut into slices, and serve!
