Fresh-baked desserts have a hard time lasting even a day in my house. If I pull something warm out of the oven, it takes all I have to not dig in right away. I know, totally ridiculous. As an adult, I should really learn some willpower.
When I pulled this cobbler out of the oven, I knew I had something amazing in my hands. Delicious, warm, baked apples and cinnamon sugar-coated cookies? Yeah, I was going to have a real hard time not eating all of this before I could let it cool.
Luckily my husband talked me out of eating it all in one sitting, and I was able to photograph it so I could share with all of you. Now get into the kitchen, and make this beauty!
Snickerdoodle apple cobbler recipe

There is nothing better than fresh-baked cookies and warm apple cobbler. That’s why I took the two and combined them to create the new mashup dessert of your dreams. Warm, spiced apples and cinnamon sugar cookies never tasted so good.
Yields 1 (9 inch) dish
Prep time: 15 minutes | Bake time: 50 minutes | Total time: 1 hour 5 minutes
Ingredients:
- 4 large Granny Smith apples, peeled, cored and sliced
- 1/2 cup dark brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon apple pie spice
- 12 raw sugar cookies (use the refrigerated, prescored package)
- 1/3 cup cinnamon sugar
Directions:
- Preheat the oven to 375 degrees F, and spray a 9-inch pie plate with nonstick cooking spray.
- To a large bowl, add the apples, brown sugar, flour and apple pie spice. Stir to combine.
- Add the apple mixture to the prepared pie plate.
- Separate your 12 sugar cookies, and lightly flatten them. Don’t worry about making them too thin; they will bake and spread as the cobbler cooks.
- Coat your pressed sugar cookies with the cinnamon sugar.
- Place the cookies on top of the apple mixture, and sprinkle with any remaining cinnamon sugar.
- Bake for about 50 minutes, until the top is golden and the apples are soft.
