We all know vegetables are good for us, right? And we all know we’re supposed to eat a lot of them, like every single day, right? But you probably don’t, and I would be lying if I told you I do. But it’s World Vegetarian Day, so let’s at least try to eat something green today.
If you fall into the “a vegetable side dish is too much work” category come dinnertime, you’re not alone. It’s easier to just eat your mac ‘n’ cheese straight from the pot, standing at the stove, using the dish towel as your napkin. (You know you’ve done it.) But when a really tasty recipe legitimately takes only 5 minutes, then there’s really no excuse to not make it.
You need only five ingredients to get this roasted broccoli rabe with chickpeas in the oven (and two of those are salt and olive oil!). It doesn’t get much easier than that. A quick broil, a few more delicious additions (hello, creamy ricotta cheese), and you’re done. Now you can bask in the glory of having eaten a plate of greens and secretly judge everyone else who didn’t.
