Pancakes are the perfect way to start the day. Even on Christmas. Usually I like to keep things light on holiday mornings because the day is always filled with food. However, when I married my husband, I learned his family does things the opposite way. They go big for breakfast and small the rest of the day.
That’s why when I came up with these pancakes, I knew they would be perfect for his family’s holiday breakfast extravaganza. Warm nutmeg-scented pancakes topped with a creamy cream cheese-eggnog sauce? How can anyone not fall in love with these holiday flapjacks?
Eggnog pancakes topped with creamy eggnog-cream cheese drizzle recipe
Eggnog isn’t just for drinking. These tasty pancakes are full of eggnog and nutmeg flavor and drizzled with a cream cheese-eggnog sauce. It’s Christmas in pancake form.

Prep time: 10 minutes | Cook time: 20 minutes | Total time: 30 minutes
Ingredients:
For the pancakes
- 2 cups Bisquick
- 1-1/2 cups eggnog
- 2 tablespoons dark spiced rum
- 1 teaspoon grated nutmeg
- 1/2 teaspoon cinnamon
For the glaze
- 4 ounces cream cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla bean paste
- 1/2 teaspoon grated nutmeg
- 4 tablespoons eggnog (plus more as needed)
Directions:
For the pancakes
- To a large mixing bowl, add all the ingredients, and whisk until combined and smooth.
- Heat a griddle to medium heat, and pour 1/4 cup of batter per pancake onto the griddle.
- Cook until the edges are set and the middle of the pancake starts to bubble, then flip, and continue cooking until browned on the bottom.
- Continue until all the batter has been used.
For the glaze
- In a small mixing bowl, mix together all the ingredients until smooth.
- Add more eggnog if the glaze is too thick or more powdered sugar if the glaze is too thin.
