Comforting gnocchi chicken soup will warm you all winter long

Like many of you, my grandma would make homemade chicken noodle soup for me whenever I was feeling under the weather.

Chicken noodle soup has long been said to be a wonderful, soothing cure-all, and be it true or not, it still tastes great when you aren’t feeling your best. Rather than noodles, I used potato gnocchi that cook up light and fluffy and perfect for this recipe, along with all the classic veggies. This makes a great soup to share with a neighbor or loved one or even to freeze for later use.

Comforting gnocchi chicken soup recipe

This homemade soup is great when you feel under the weather. Gnocchi replaces the noodles in this vamped-up chicken noodle soup.

Serves 8

Prep time: 20 minutes | Cook time: 30 minutes | Total time: 50 minutes

Ingredients:

  • 3 cups cooked chicken breast, chopped
  • 4 celery stalks, chopped
  • 2 large carrots, sliced
  • 6 cups chicken broth
  • 1 cup water
  • 1/2 tablespoon dried marjoram
  • 1/2 teaspoon dried thyme
  • 1 small handful fresh parsley, chopped
  • 4 bay leaves
  • Salt and pepper, to taste
  • 1 (12 ounce package) potato gnocchi

Directions:

  1. Heat the stove to high heat. To a large soup pot, add all the ingredients except for the gnocchi.
  2. Bring the soup to a boil, then reduce the heat to medium-low, and cover the pot with the lid. Simmer the soup for 25 minutes, stirring occasionally.
  3. Remove the lid, and add the potato gnocchi to the soup. Stir, and cook for an additional 5 minutes or until all the gnocchi float to the top of the soup.
  4. Ladle the soup into bowls, and serve warm.
