Buffalo chicken strips

Serves 4

You can cook your chicken breast any way you like for this dish. It’s a good way to use leftover chicken. To speed things up, you can use a precooked, frozen chicken fillet.

Ingredients:

1 stick (4 ounces) butter
1/2 cup hot sauce, such as Frank’s
1 pound cooked chicken breast cut into strips
Blue cheese crumbles to garnish, optional
2 tablespoons chopped fresh chives, optional

Directions:

  1. Melt butter in a medium skillet over medium heat. Stir in hot sauce and let cook for one minute.
  2. Add chicken breast strips and cook, stirring, until heated through.
  3. Sprinkle chicken with blue cheese crumbles and chopped chives. Serve.
