Elegant chicken salad
The flavours in this chicken salad are so sophisticated, no one will suspect how easy it was to put together. Serve on chilled plates in Bibb lettuce cups, or make sandwiches on crusty baguettes.
Ingredients:
1 fully cooked roasted chicken
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon fresh lemon juice
1/2 teaspoon sugar
3 tablespoons chopped fresh dill
2 small shallots, minced
Kosher salt and freshly ground black pepper to taste
1/4 cup smoked almonds, chopped
Directions:
- Remove the meat from the carcass, being careful to avoid bones and cartilage, and cube any large pieces. Place meat in a mixing bowl (discard the bones).
- In a small mixing bowl, whisk together the mayonnaise, sour cream, lemon juice and sugar. Stir in the dill and shallots, mixing well. Season to taste with salt and pepper.
- Pour dressing over chicken in bowl and stir gently to coat well. Refrigerate until ready to serve; can be made up to eight hours in advance. Right before serving, transfer chicken salad to serving bowl and sprinkle chopped smoked almonds over top.
