Black bean & chicken tacos
Ingredients:
- 1 can drained black beans
- 1 (12.5 ounce) can cooked chicken
- 1 tsp cumin
- 1 tsp chili powder
- 1 tbsp lime juice or white vinegar
- 1 package small soft taco tortillas
- Taco Toppings: shredded lettuce, shredded cheese, diced tomatoes, diced onions
Directions:
Combine black beans, chicken, cumin, chili powder, lime juice or vinegar in a large, microwave-safe bowl (add salt and pepper to taste). Heat in the microwave for about three minutes. Serve on tortillas and top with your favourite taco toppings.
Veggie french bread pizza
Ingredients:
- 1 shredded carrot
- 1 finely diced red bell pepper
- 1/4 cup finely diced fresh spinach
- 2 finely diced tomatoes
- 2 tbsp chopped fresh basil
- 1 tsp sugar
- 2-4 cups mozzarella cheese
Directions:
- Combine carrot, bell pepper, spinach, tomatoes and basil in a large saucepan over high heat.
- Add sugar and salt and pepper to taste.
- Simmer until reduced in half (about six minutes).
- Halve French bread lengthwise and spread mixture onto them.
- Top with mozzarella cheese and bake in an oven preheated to 450 degrees F until the cheese is melted (about five minutes).
Angel hair pasta with veggies
Ingredients:
- 1 package angel hair pasta
- 1 cup carrots, sliced
- 1 sliced zucchini
- 1/2 diced onion
- 4 tbsp butter
- Salt and pepper to taste
- 1/2 cup freshly shredded Parmesan cheese
Directions:
- Boil a large pot of water. Add angel hair pasta and cook according to package directions (about five minutes).
- Heat butter in a large skillet then add carrots, zucchini and onion. Cook until soft (about five to six minutes).
- Drain cooked pasta then pour cooked veggies and butter over the pasta. Sprinkle with Parmesan cheese, salt and pepper to taste. Serve with slices of French bread.
