Gingerbread Pancakes
The spicy aroma will have them running to the table!
Ingredients:
- 2 cups all purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground nutmeg
- 3/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 eggs, slightly beaten
- 1 1/4 cups buttermilk
- 1/3 cup molasses
- 1/3 cup strong coffee
- 3 tablespoons cooking oil
Directions:
- Combine dry ingredients and wet ingredients in separate bowls.
- Add wet ingredients all at once to flour mixture, stirring just to combine.
- Cook on hot griddle until golden, aproximately 2 minutes per side.
Mango Hot Cakes
Get island flavour, even on the coldest mornings!
Ingredients:
- 1 cup flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 1/8 teaspoon allspice
- 1 egg, slightly beaten
- 1 cup milk
- 2 tablespoons melted butter
- 1/3 cup toasted macadamia nuts or almonds, chopped
- 1 teaspoon finely shredded lime peel
- 2 large mangoes, peeled and cubed
- vanilla yogurt for topping
Directions:
- In a large mixing bowl stir together flour, sugar, baking powder, salt and allspice. Make a well in the centre and set aside.
- In a second bowl, combine egg, milk and melted butter. Add this mixture all at once to the flour, stirring until moistened. Now fold in chopped nuts and lime peel.
- When ready to fry, place 2–3 cubes of mango on the hot skillet and cover with 1/4 cup batter. Cook approximately 2 minutes on each side and serve warm, topped with vanilla yogurt.
