Lemon meringue pie

For spring you want to go a bit lighter with the ingredients, and we can think of no more of a springtime pie than lemon meringue. The tartness of its light meringue topping and bright yellow lemon custard make our lips pucker in delight. Meringue can be tricky to get right. When making meringue, you can use eggs that are cold, but you will get better results if the eggs are room temperature, so remember to take them out of the fridge in advance. Strawberry rhubarb pie

Rhubarb is in season in April and May (and only for a short time), so grab it while you can to bake some strawberry rhubarb pie. The leaves of rhubarb are actually toxic; it’s the red stalks that you want to use.
