Baked stuffed apples: A healthy fall dessert

When the cold weather hits in the fall, it’s easy to overindulge in our favourite comfort foods. Fortunately these baked stuffed apples are one autumn treat you can feel good about enjoying.

Eating rich apple pies every night in the winter won’t do wonders for your conscience — or your waistline. Fortunately these baked stuffed apples are loaded with healthy ingredients and completely guilt-free!

Ingredients:

  • 2 apples (McIntosh work great)
  • 1/2 cup rolled oats
  • 4 dates, chopped
  • 2 tablespoons pecans, chopped
  • 2 tablespoons maple syrup
  • 1 tablespoon margarine
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/3 cup apple juice
  • 1 tablespoon brown sugar

Directions:

  1. Preheat the oven to 350 degrees F.
  2. Cut the apples in half, and cut out the cores. Turn the apples on their sides, and cut a section off each bottom so they can sit flat on a pan.
  3. Combine the oats, dates, pecans, maple syrup, margarine, cinnamon and nutmeg in a small bowl.
  4. Spoon the mixture onto the apple halves.
  5. Pour apple juice over the apples, then sprinkle on the brown sugar.
  6. Place the tray in the oven, and bake for 25–30 minutes.
  7. Remove from the oven, and let the apples cool slightly before serving, as they will be quite hot.
