The scones you find at your local coffee shop or grocery store are filled with fat and calories and are lacking in nutritional value. Fortunately this healthy scones recipe lets you enjoy the comforting goodness of scones in a guilt-free way.

Most store-bought scones are made primarily of sugar, butter and white flour — none of which gives you the energy you need to make it through a tough day. Start your morning right with these healthy scones, which are brimming with nutritious ingredients.

Ingredients:

  • 3/4 cup whole-wheat flour
  • 3/4 cup all-purpose flour
  • 1 cup rolled oats
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter
  • 1/4 cup Greek yogourt
  • 1/3 cup milk or milk alternative
  • 1 egg
  • 3/4 cup frozen raspberries
  • 3/4 cup frozen blueberries

Directions:

  1. Preheat the oven to 400 degrees F.
  2. Lay a piece of waxed paper over a large cutting board.
  3. In a medium-size mixing bowl, combine the flours, oats, sugar, baking powder and salt.
  4. Add in butter. Using a knife, cut the butter until the pieces become small enough that they blend in with the dry ingredients.
  5. In a small bowl, combine the Greek yogourt, milk and egg.
  6. Pour the wet ingredients into the dry ingredients, and stir to combine.
  7. Add in the frozen berries, and use your hands to combine briefly. Don’t do this for too long, or the berries will get mushy and runny. Your hands will turn a glorious shade of purple, but it will be worth it! You can always use gloves, if you prefer.
  8. Using your hands, scoop the dough onto the waxed paper, and press it into a flat square about 1-1/2 inches thick.
  9. Cut the dough into triangles, and transfer them to a baking tray. Place them about 1 inch apart from one another.
  10. Bake in the oven for 15–17 minutes.
  11. Remove from heat, and let the scones cool slightly before serving or transferring them to a resealable container for future breakfasts.
