When you need a comforting, tasty treat in the morning or the middle of the day, you’ll be happy to reach for these cheese blintzes. They’re the perfect combination of sweet and savoury.
A sweet combination of cheeses wrapped up in a crepe? Sounds divine. Cheese blintzes are good anytime, from breakfast to late-night snacking and every meal in between. They’re light but filling and downright delicious.
Homemade cheese blintzes
Serving size 12
Ingredients:
- 2 cups all-purpose flour, sifted
- 3/4 cup milk
- 2/3 cup water
- 4 eggs
- 1/2 teaspoon salt
- 1/4 cup butter, melted
- 1-1/2 cups ricotta cheese
- 1/2 cup light cream cheese
- 2 tablespoons sugar
- 1 teaspoon vanilla

Directions:
- In a medium bowl, whisk together the eggs, water, milk and salt. Slowly add in the flour, stirring continuously until no lumps are present.
- Place the batter in the fridge to cool. While the batter cools, combine the ricotta, cream cheese, sugar and vanilla in a food processor. Place the cheese mixture in the fridge to cool.
- Heat a spoonful of the melted butter in a crepe pan or small frying pan over medium-low heat. Once the butter begins to sizzle and slides easily over the surface of the pan, you are ready to begin making the crepes. Pour a few tablespoons of the batter into the centre of the pan, and immediately tilt the pan so the batter disperses into a thin, even layer. Let it cook for about a minute or until none of the batter is still gooey. Flip the crepe, and let it cook on other side for 10 seconds. Transfer it to a plate to cool. Continue this process of heating butter in the pan and cooking crepes until all the batter is used up.
- Preheat the oven to 350 degrees F.
- One crepe at a time, lay them flat and place roughly 3 tablespoons of the cheese mixture in a straight line along the centre. Fold two sides of the crepe inward, and roll it up as you would a sandwich wrap or burrito.
- Place the blintzes on a baking tray, and bake them in the oven for 15 minutes.
- Serve the blintzes with jam, powdered sugar, maple syrup or another topping of your choice.

You might wind up with more crepes than you need, but they’re easy to freeze and make for a great snack with a sprinkle of sugar and a splash of lemon juice whenever you want.
