Guilt-free truffles

Do you ever feel guilty after chowing down a piece of cake or a bowl of ice cream just before bed? We’ve all been there. But with these tasty, raw truffles made of entirely healthy ingredients, you can satisfy your sweet tooth and feel good about it.

Nuts about cocoa

Recipe adapted from Raw Food Detox by Ulrika Davidsson

The delicious blend of nuts and cocoa in these little balls is absolutely divine. Plus, they’re so healthy you can treat yourself at any time of the day.

Ingredients:

  • 3/4 cup walnuts
  • 1/3 cup cashews
  • 1/4 cup dates
  • 1 tablespoon cocoa powder
  • 1/2 tablespoon coconut oil
  • 1/2 tablespoon agave nectar
  • 2 tablespoons water

Directions:

  1. Place the walnuts, cashews and dates into a food processor, and blend until they’re broken down into little pieces.
  2. Add in the dates, cocoa powder, coconut oil, agave nectar and water. Pulse or blend to combine. Scrape down the sides, and press down as needed until all the ingredients are fully combined.
  3. Chill the mixture in the fridge for 30 minutes.
  4. Roll the mixture a tablespoon at a time into small balls.
  5. Store the truffles in a resealable container in the fridge.

A touch of the tropics

Serving size 14

If you prefer truffles with a lighter, more tropical twist, you’ll appreciate the crunchy and delicious coconut in these tasty treats.

Ingredients:

  • 1/2 cup raw almonds
  • 1/2 cup raw cashews
  • 1/2 cup shredded, unsweetened, dried coconut
  • 1 tablespoon agave nectar
  • 1 tablespoon coconut oil
  • 2 tablespoons water
  • 1/8 teaspoon salt
  • 1/8 teaspoon stevia

Directions:

  1. Place the almonds and cashews into a food processor, and blend until they begin to form a powdery crumble.
  2. Add the coconut, and pulse a few times.
  3. Add in the agave, coconut oil, water, salt and stevia. Blend until fully combined, scraping the walls and pressing down the mixture as needed.
  4. Chill the mixture in the fridge for 30 minutes.
  5. Roll the mixture a tablespoon at a time into small balls.
  6. Store the truffles in a resealable container in the fridge.
