Ingredients:
- 4–5 cucumber slices (reserve one for garnish)
- 4–5 fresh mint leaves
- Tonic water
- Ice
Directions:
- Muddle the mint and 2–3 cucumber slices at the bottom of a rocks glass.
- Fill a tall glass with ice and tonic water.
- Add the remaining slices of cucumber to the glass.
- Stir lightly, and serve.

Berry-ginger lemonade
Spicy ginger and tangy lemonade are a match made in mocktail heaven. Trust us, you won’t miss the alcohol when you unwind with a glass of this tart, sophisticated drink, which lends itself well to entertaining.
Serving size 1
Ingredients:
- 1 ounce ginger simple syrup. Heat one cup of sugar in one cup of water until the sugar dissolves. Add several thin slices of ginger to the hot liquid, and let steep for 30 minutes. Allow to cool before using.
- 4 ounces lemonade
- 10 frozen blueberries
- Sparkling water
Directions:
- Add the lemonade and simple syrup to a glass, and stir to combine.
- Add the frozen blueberries.
- Top with sparkling water.

Grapefruit-rosemary fizz
It might sound off the wall, but this herbaceous combination of heady rosemary and the slight bitterness of grapefruit makes for a unique and palate-pleasing drink on a warm spring day. We suggest using pink grapefruit for a visually stimulating mocktail.
Serving size 1
Ingredients:
- 3 ounces pink grapefruit juice
- 1 ounce rosemary simple syrup (see above recipe for ginger simple syrup, but replace the ginger slices with one large sprig of rosemary)
- 1 round slice of pink grapefruit for garnish
- 1 sprig of rosemary for garnish
- Sparkling water
- Ice
Directions:
- Combine the rosemary simple syrup and the grapefruit juice in a rocks glass filled with ice.
- Stir to combine.
- Top with sparkling water.
- Add a sprig of rosemary to the drink and a grapefruit slice to the outside of the glass as garnish.
Orange-raspberry spritz
The sweet and slightly tangy combination of orange and raspberry is ideal for celebrating the return of warmer weather. We like serving this light and lively mocktail as guests arrive (feel free to add vodka for anyone who prefers a stronger beverage).

Ingredients:
- 4 ounces orange juice
- 4–5 raspberries (plus a few for garnish)
- 1 ounce plain simple syrup (see above recipes, but omit the extra ingredients)
- Ice
- Sparkling water
Directions:
- Lightly muddle the raspberries at the bottom of a Collins glass.
- Add the orange juice and simple syrup, and stir to combine.
- Add ice, and top with sparkling water.
- Garnish with however many raspberries you wish.

Ingredients:
- 3 ounces pineapple juice
- 1/2 ounce mint simple syrup (see recipes above, but replace the rosemary or ginger with 2 large sprigs of mint)
- Ice
- 1 slice of pineapple for garnish
- 1 sprig of mint for garnish
Directions:
- Add the pineapple juice and mint simple syrup to a cocktail shaker filled with ice.
