Fish and chips have a brand new look! While there isn’t anything wrong with the traditional dish, our revamped fish and chips — or rather our chipotle shrimp and sweet potato fries — are a delicious, fresh take that will leave your taste buds happy and satisfied.
Two simple recipes, one mouth-watering dish — it doesn’t get much better than that!
Chipotle shrimp
Serving size 4
Ingredients:
- Approximately 500 grams (1 pound) of whole shrimp, peeled and de-veined, medium size or larger
- 2/3 cup butter
- 1/3 cup extra-virgin olive oil
- 6 garlic cloves, minced
- 1 chipotle pepper in adobo sauce, seeded and finely chopped
- Salt to taste (only necessary if using unsalted butter)
- Pinch of freshly ground black pepper
Directions:
- In a large skillet, heat the butter and oil over medium heat.
- Add the garlic and chipotle.
- Stirring often, sauté for approximately 3 or 4 minutes until the garlic has softened.
- Add the shrimp, and continue cooking until the shrimp has turned completely pink — about 5 minutes.
- Lightly season with pepper.
- Garnish with a wedge of lime and a sprig of cilantro.
- Serve with crusty bread for soaking up the sauce and sweet potato fries.
Tip
This recipe makes a generous portion of chipotle-garlic sauce, so feel free to add in more shrimp as needed. The sauce can be modified, so if you want to turn up the heat, add an extra chipotle pepper or more garlic if desired.
Sweet potato fries
Serving size 4
Ingredients:
- 2 large sweet potatoes
- 1 tablespoon canola or olive oil
- Kosher salt
- Freshly ground pepper
- Paprika
Directions:
- Preheat the oven to 450 degrees F.
- Peel and cut the sweet potatoes into similar-size fry-shaped pieces.
- Add the fries to a bowl, and toss lightly with olive oil, then add salt and pepper to taste.
- Lay the fries in a single layer on a baking sheet, and lightly sprinkle the fries with paprika or smoked paprika.
- Bake for 20–25 minutes or until browned. Turn halfway through.
- Serve with the chipotle shrimp.
Tip
Sweet potato fries have a tendency to turn soggy, but don’t let that deter you from preparing this yummy dish. Just keep a few things in mind. First, if you washed the potatoes, make sure to pat them dry before you toss them with oil. Second, use just enough oil to lightly coat the fries. Third, keep the fries in a single layer on the baking sheet, and arrange them so they don’t touch each other or the sides of the pan while baking.
