Slow Cooker Sunday: Indian butter chicken is a surprisingly easy dish

Are you a fan of the fragrant and sometimes spicy Indian cuisine? I love all types of ethnic cuisines, Indian being one of my favorites. Indian food is not only super flavorful, but the dishes use many different spices and seasonings, which is one of the reasons I love it so much (because what’s worse than a bland meal?). Butter chicken is something I usually order in and wanted to create an easy way to make at home without stress.

This recipe uses organic chicken breasts that I cut into chunks and then simmered in a tomato-based sauce with lots of spices. The best part? It’s made in the slow cooker.

Slow cooker Indian butter chicken recipe

Chicken is simmered in the slow cooker along with a flavorful sauce seasoned with tandoori, garam masala and curry spices. Serve over steamed basmati rice to complete your plate.

Serves 4

Prep time: 15 minutes | Cook time: 6 hours | Total time: 6 hours 15 minutes

Ingredients:

  • 4 organic chicken breasts, cut into bite-size pieces
  • 1 small sweet onion, diced
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon coconut oil
  • 4 garlic cloves, minced
  • 1/2 cup tomato paste
  • 1-1/4 cups full-fat canned coconut milk
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons curry powder
  • 1 tablespoon tandoori spice mix
  • 1/2 tablespoon garam masala
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Directions:

  1. To the slow cooker, add the chicken and the onions.
  2. In a bowl, combine all the remaining ingredients, and mix well.
  3. Pour the sauce over the chicken, and cover the slow cooker with the lid.
  4. Set the cooker to cook on low for 6 hours or until the chicken is completely cooked.
  5. Garnish with fresh cilantro, and serve the chicken alongside vegetables or steamed rice.
