Nothing makes me feel more like a kid again than a gooey fudge brownie. Well, maybe except for a helping of fluffy marshmallows.

t Wait a minute. A good dessert still makes it a good day, no matter how old you are! And I suspect that anyone loves a fudge brownie and marshmallows, especially if you put them together in a minty fluffy bite!

t The wonderful thing about these mint fudge brownie marshmallow bites is that it all starts with Fiber One’s Mint Fudge Brownies, which means less guilt! All you need to do is top them with homemade marshmallows. If you’ve never made homemade marshmallows, stop everything you’re doing and give it a go. There’s nothing else like it, and it’s so easy to make! You won’t be able to eat just one. Which is totally OK. You deserve to feel like a kid again!
t Mint fudge brownie marshmallow bites recipe
Ingredients:
t Makes 32 bites
- 8 Fiber One Mint Fudge Brownies
- 1-1/2 packages unflavored gelatin
- 3/4 cup granulated sugar
- 1/2 cup light corn syrup
- Pinch of salt
- 1-1/2 teaspoons vanilla
- Confectioner’s sugar, for dusting
- Cocoa powder, for dusting

Directions:
- Line an 8-inch loaf pan with parchment paper and dust with powdered sugar. Arrange the Fiber One Mint Fudge Brownies in the bottom of the pan to create a base layer.
- In the bowl of a stand mixer with the whisk attachment, dissolve the gelatin in 1/4 cup of water. Let it stand so the gelatin softens while you make the syrup for the marshmallows.
- In a small saucepan, combine the sugar, corn syrup and salt. Attach a candy thermometer to the pan. Over low heat, stir the sugar until it dissolves. Bring the heat up to medium-high and bring the sugar to a boil. Cook the syrup to 240 degrees F; this will take about 7 minutes or so. As soon as you reach the desired temperature, remove the syrup form the heat.
- With the mixer on low speed, stir the gelatin as you slowly drizzle the syrup into the mixing bowl. Raise the mixer speed to high and whip the sugar mixture for about 12-15 minutes. The marshmallow will be fluffy and just warm.
- Spread the marshmallow over the brownies in the pan and dust with powdered sugar. Let it sit overnight to let the marshmallow layer cool and dry out.
- Lift the brownies out of the pan using the parchment paper as a sling. Using a sharp knife that you have wiped with a little oil on a paper towel, cut into squares. Dust with cocoa powder and enjoy.
