Kicked-up corn dip is the easiest, cheesiest snack for a crowd (VIDEO)

Is there anything better than digging into a warm, bubbly dip? It has all the requirements of the ideal snack — ridiculously easy, tons of cheese, lots of spice, bacon on top and perfect with a beer. It’s also the best excuse to eat corn chips. (You might be tempted to just eat this dip with a spoon, but your guests would probably prefer you stick to the chips. My advice: Grab the spoon once they’ve left.)

Kicked-up corn dip recipe

Ingredients:

  • 4 roasted green chilies (like Anaheim or Hatch, if in season), chopped
  • 8 ounces sour cream
  • 16 ounces cream cheese
  • 1/2 cup black beans
  • 1 cup shredded pepper jack cheese
  • 1 can corn
  • 1/4 teaspoon turmeric
  • 1 tablespoon cayenne pepper
  • Salt and pepper, to taste
  • 1/2 small onion chopped
  • 2 garlic cloves, chopped
  • Fresh cilantro, for topping
  • Chopped cooked bacon, for topping
