Alphabet soup is fun to serve to kids, but adults will love it too. Add heaps of your favorite vegetables to this warming soup, and your kids will ask for it again and again, whether or not it’s Meatless Monday.

You might find the kids lingering over their bowls: They might be spelling out their appreciation to you for serving such a tasty dish! This recipe spells wholesome and delicious.

Kid-friendly veggie alphabet soup recipe

Can a soup be fun to eat? It can if it includes the alphabet. Toss your favorite veggies into this soup, like green beans, diced zucchini or even broccoli. Kids and adults will enjoy this delightful soup.

Serves 4-6

Prep time: 10 minutes | Cook time: 15 minutes | Total time: 25 minutes

Ingredients:

  • 2 ounces dried alphabet pasta
  • 1 tablespoon olive oil
  • 1/4 cup diced yellow onion
  • 1 large carrot, ends trimmed, diced small
  • 1 rib celery, diced small
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 garlic clove, minced
  • 4 cups vegetable broth
  • 6 ounces diced tomatoes in juice
  • 1/3 cup frozen peas
  • 1/3 cup frozen corn
  • Grated Parmesan cheese, for garnish (optional)

Directions:

  1. To a Dutch oven or stockpot over medium heat, add the olive oil. When the oil is hot, add the onion, carrot and celery, and cook for about 4 minutes or until the vegetables begin to soften.
  2. Add the salt, black pepper and garlic. Stir, and cook for about 30 seconds.
  3. Add the vegetable broth and tomatoes. Stir, increase the heat, and bring the mixture to a boil.
  4. Reduce the heat, add the peas, corn and pasta, and cook for 9 to 10 minutes or until the pasta is tender.
  5. Serve hot, garnished with Parmesan cheese if you’d like.
