Christmas is a feast-filled occasion that gathers friends and family around a table spread with many mouthwatering dishes. If you prefer a traditional holiday meal, roasted turkey and stuffing and a Christmas pudding are without question on the Christmas menu. Whether you’re looking for a new recipe or have never made these traditional dishes, you’ll find the following Christmas renditions quite impressive yet easy to prepare.
Roasted Stuffed Turkey
Serves 8 to 10
Ingredients:
1 (9- to 10-pound) whole turkey, neck and giblets removed
30 grams butter, melted
Salt and freshly ground black pepper to taste
750 grams cubed bread
100 grams dried cranberries
100 grams golden raisins
Juice of 2 oranges
Zest of 1 orange
3 eggs
Directions:
1. Preheat oven to 220 degrees C. Rub turkey with butter and season skin and cavity with salt and pepper. Place turkey in a roasting pan.
2. In a large bowl, combine bread, cranberries, orange juice and zest, and eggs, mixing well. Season with salt and pepper. Place stuffing inside turkey cavity and tie the legs together with twine.
3. Place turkey in oven and roast for 20 minutes. Lower heat to 180 degrees C. and cover turkey with foil. Roast 2-1/2 hours, uncover, and roast an additional 30 minutes or until a meat thermometer inserted in the leg reaches 82 degrees C.
4. Remove turkey from oven and let rest for 15 minutes before slicing and serving with stuffing.
Christmas Pudding
Serves 8 to 10
Ingredients:
60 grams pearl sago
230 milliliters milk
5 grams baking soda
150 grams brown sugar
90 grams bread crumbs
150 grams raisins
100 grams chopped dates
2 eggs, lightly beaten
50 grams melted butter
Directions:
1. In a small bowl, stir together sago and milk. Cover and refrigerate overnight.
2. Grease a pudding basin and put on a kettle of water to boil. Set a trivet in a large pot.
3. In a large bowl, combine sago mixture and baking soda. Stir in sugar, bread crumbs, raisins and dates. Add eggs and butter to pudding mixture, stirring well to combine.
4. Pour mixture into pudding basin and cover with a round piece of parchment paper cut to the size of the pudding basin opening. Cover with a lid.
5. Place pudding basin on the trivet in the large pot. Turn stovetop burner to medium-high heat. Fill pot with boiling water half-way up the sides of the pudding basin. Bring the water to a boil again.
6. Reduce heat to medium-low, cover pot, and simmer for 4 hours or until pudding is set. Fill pot with boiling water as necessary while pudding is cooking. Remove from pot, uncover pudding basin, and serve.
