How to have breakfast ready in a flash

Aloha Omelette

Serves 4

Ingredients:

  • 8 eggs
  • 6 tbs. milk
  • Salt and pepper
  • Vegetable oil/cooking spray
  • 1/2 cup small pineapple chunks
  • 1/2 cup cubed ham
  • 1/2 cup Swiss cheese, grated
  • 1/2 cup Cheddar cheese, grated

Method:

  1. Whisk eggs with milk. Add salt and pepper to taste.
  2. Pour oil or cooking spray to a pan and heat. Add eggs. When cooked halfway through, top with pineapple, ham and cheeses. Allow cook for several minutes.
  3. Fold omelette over itself and allow to cook through.

Baked Peach Oatmeal

Serves 4

Ingredients:

  • 2 cups rolled plain oats
  • 1-1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 3/4 tsp. salt
  • 2 cups skim milk
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/3 cup peach preserves
  • 1 large egg, beaten
  • 2 cups peaches, chopped
  • Cooking spray/oil

Directions:

  1. Preheat oven to 200C and coat a baking dish with cooking spray or oil.
  2. Mix oats with baking powder, cinnamon and salt.
  3. In a separate bowl, combine the milk, brown sugar, butter, peach preserves and egg.
  4. Combine oats with preserves mixture and pour into baking dish.
  5. Bake for 15 minutes then add peaches. Bake for a further 15 to 20 minutes. You can add a little more brown sugar if desired.

Bacon, Egg and Cheese Croissant-wich

Seves 4

Ingredients:

  • 4 large croissants
  • 1 tbs. butter
  • 4 eggs, scrambled or fried
  • 8 slices bacon, crisped
  • 4 slices cheese
  • 1 avocado, sliced

Directions:

  1. Preheat oven to 180C.
  2. Slice croissants in half lengthwise and spread butter on both sides.
  3. Layer the eggs, bacon, cheese and avocado slices on one half of the croissant and top with the other half.
  4. Place the croissant-wich on a baking sheet and bake for 5-6 minutes, or until cheese is melted and sandwich is heated through.
