Serves 4
Ingredients:
- 4 tortillas
- Lettuce
- 1 chopped tomato
- 1/2 chopped onion
Falafel:
- Falafel mix (available in all good stores)
- 4 carrots, sliced thinly
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 5 tablespoons olive oil
- Salt
Yoghurt sauce:
- 1 garlic clove
- 1 tablespoon tahini paste
- 1 tablespoon lemon juice
- 1/2 cup of Greek yoghurt
- 2 tablespoons chopped, fresh mint
- Salt and pepper to taste
Instructions:
- Preheat the oven to 190 degrees C.
- Mix all the ingredients for the falafel and let them sit for roughly 10 minutes. Be sure not to leave them too long or else later on you’ll have trouble keeping it all stuck together.
- Mix all the yoghurt ingredients together and place them in the fridge.
- With the falafel mix, mould 12-16 balls and bake for 15-20 minutes. Be sure to cover your baking tray in tin foil and cooking spray.
- Once the 15-20 minutes have passed they should be brownish on the bottom. If they’re not, leave them longer. If so, flip them over and bake for the same amount of time again.
- In the last few minutes of baking, mix the tomato and onion with the yoghurt mix and spread it over your four tortillas. The tortillas will taste better if you heat them gently for a few minutes, but that’s up to you.
- Once the falafel balls are ready, place them in the tortillas, top them off with lettuce and wrap everything up.
Finally, enjoy!
