How to make incredible pork fajitas

Make no mistake, pork fajitas are delicious and easy to prepare. With a Mexican street salad you can make the whole thing a great meal for you and the kids to enjoy cooking and eating.

Thanks to the ease of cooking and the self-serve dynamic, this meal gets the whole family talking and laughing throughout the whole process. Of course, nothing beats the fresh kick of your first bites, but you’ll all be in stitches by the end as your carefully constructed tortillas fall apart into the plate and all the delicious juices cover your hands.

Pork fajitas

Ingredients:

  • 800 grams pork mince
  • 1 teaspoon dried sage
  • 2 onions
  • 2 green peppers
  • 1 lime
  • 2 cloves of garlic
  • 6 small green chillies
  • Fresh mint to taste
  • 4 large tomatoes chopped into small chunks
  • 4 flour tortillas
  • 1 pot of Greek yoghurt

Instructions:

  1. Firstly, fry the pork mince and sage with salt and pepper.
  2. Stir for a few minutes to break up the mince.
  3. Next, add the chillies, garlic, peppers and onions and fry the whole thing together on a high heat for roughly 15 minutes. The mince should start turning golden by this point.
  4. Stir in the chopped tomatoes and just under half a glass of water, keeping in mind it isn’t supposed to be a stew and therefore you should refrain from adding too much water.
  5. Turn the heat down for 10 minutes.
  6. Chop the mint leaves and when it all looks ready to serve, sprinkle them over the top with a squeeze of lime juice. Serve in the tortillas with yoghurt.

Mexican street salad

Ingredients:

  • Half white cabbage
  • Half red cabbage
  • 2 radishes
  • 2-3 limes
  • Coriander to taste
  • 2 large jalapeño chillies
  • Red onion
  • Sea salt
  • Olive oil
  • Green Chilli

Instructions:

  1. Shred the white cabbage and finely slice the radishes.
  2. Slice the onion and chillies together.
  3. Chop the coriander finely and add the ingredients you have prepared together now.
  4. Finally, add the red cabbage (avoid doing it before as everything will turn red).
  5. The salad is now prepared so just add some olive oil, lime juice and salt and pepper to taste. You can serve the salad on the side or just build up your fajitas to the point of bursting.
