The humble Aussie barbecue: It’s a summer tradition synonymous with snags, prawns, steaks and beer. But did you know you can cook up some really wicked desserts on the barbie? Why not try some of these grilled treats?
Grilled peaches with raspberry puree
Serves 6
Ingredients:
- 2-1/4 cups frozen or fresh raspberries
- 3 tablespoons water
- 3 tablespoons sugar (for the puree)
- 1 tablespoon fresh lemon juice
- 3 tablespoons unsalted butter
- 1-1/2 tablespoons (packed) dark brown sugar
- 6 medium size ripe but firm peaches, cut in half and with the stones removed
- 12 cinnamon quills
Directions:
For the raspberry puree
- Defrost the raspberries if they are frozen.
- In a food processor, blend the 3 tablespoons of water with the raspberries until smooth.
- Using a strainer or a sieve, drain off as much liquid as possible from the raspberries into a bowl.
- Stir in the sugar and lemon juice.
This can be made a day in advance if it’s kept refrigerated.
For the grilled peaches
- Crank up the barbecue.
- In a small saucepan, melt the butter and the brown sugar.
- Once melted, remove the butter and the sugar from the heat.
- Using a pastry brush, liberally coat the peach halves with the brown sugar and butter mix.
- Place the peaches on the barbecue and grill them for about 7 minutes or until they are tender.
- Place the peaches in serving bowls. Drizzle the raspberry sauce over the peaches and garnish them with cinnamon quills (alternatively, you can use chocolate wafer sticks).
Grilled banana boats
Grilled banana boats can be designed around whatever ingredients you have in the cupboard. They’re a big hit with kids and once you slice open the banana for them, they should be able to go bananas stuffing them. You can follow the recipe below or watch this step-by-step YouTube demonstration.
Ingredients:
- 1 banana per person
- An assortment of chocolate chips, chunky peanut butter, marshmallows, chocolate bars, nuts, etc.
- Foil for wrapping
Directions:
- Wash your banana and cut it length-wise, being careful not to cut all the way through.
- Fill the banana with your choice of fillers — chunky peanut butter, chocolate chips, marshmallows, etc.
- Wrap the banana in foil.
- Put it on the barbecue for 3-5 minutes.
- Serve the bananas with your favourite ice cream.

Grilled mango

Ingredients:
- 4 mangoes, preferably grown in Australia
- 8 tablespoons brown sugar
- Ice cream
- Cinnamon
Directions:
- Using a sharp knife, carefully cut the cheeks off the mangoes.
- Take the knife and make criss-cross indents in the flesh, then sprinkle the mangoes with sugar.
- Cook the mangoes face down on the barbecue on a medium heat for 3 minutes or until they are golden brown.
- Serve with yoghurt or ice cream and a dusting of cinnamon, or on their own as a snack.
