Spicy meatballs with tomato jam recipe
For the meatballs:
Ingredients:
- 500 grams minced beef
- 1 red onion, diced
- 50 grams shredded cheese
- 2 eggs
- 1 cup breadcrumbs
- Salt and pepper, to taste
- 1 clove garlic, crushed
- 2 teaspoons chilli flakes
Directions:
1. Preheat the oven to 200 degrees C.
2. In a large bowl, combine the meat, onion, breadcrumbs, cheese, garlic and eggs.
3. Knead the ingredients together until they’re well combined. If the meat is too sticky, add more breadcrumbs; if it’s too crumbly, add a bit of milk or water.
4. Once you’re happy with the consistency of the mixture, add the spices (salt, pepper and chilli flakes).
5. Using the palms of your hands, roll the mixture into balls and place them in an oven-proof dish.
6. Bake the meatballs at 200 degrees C for 15-20 minutes.
7. When they’re ready, pierce them with bamboo skewers and serve with the tomato jam.
For the tomato jam:
Ingredients:
- 10 tomatoes
- 1/2 lemon
- 1/2 cup sugar
Directions:
1. Place the tomatoes into a medium-sized pot.
2. Pour boiling water over the tomatoes and leave them to scold for 1-2 minutes.
3. Peel the skin off the tomatoes.
4. In a large bowl, mash the tomatoes.
5. In a medium-sized pan, combine the tomatoes, sugar and lemon juice, mix them together and bring them up to a boil.
6. Once the mixture is boiling, turn the heat down and let it simmer for 15-20 minutes, or until the water has evaporated.
7. Once the mixture has a jam-like consistency, take it off the heat and scoop it into a jar or into a ramekin to be served with your meatballs.
